This was the French breakfast and a plate of fruity pancakes served with creamy yoghurt. Make for 8 pancake.

The Pancakes
  • 80g self-raising flour (For chocolate flavoured pancakes, substitute 16g of flour for 16 g sieved cocoa powder)
  • 1tsp baking powder
  • 1tbsp caster sugar
  • 1 large egg, beaten
  • 100 ml milk
  • Sunflower oil
The Pick 'N' Mix
Raspberries, blueberries, sliced banana, sliced peeled pears, chopped walnuts or pecans, chocolate drops, or dried fruit such as raisins, sultanas, chopped apricots

For Serving
Maple syrup or runny honey, Greek yoghurt, mixed fresh fruit

  1. Mix together flour, baking powder and caster sugar
  2. Add egg and milk, stirring briefly to form a batter.
  3. Heat a frying pan over a medium heat and brush with just a little sunflower oil.
  4. Drop 2 or 3 individual tbsp of the batter into the pan.
  5. Place your chosen pick 'n' mix flavour on top, and cook for 1 minute until bubbles form on the surface.
  6. Turn the pancakes over and cook for a further 1-2 minutes until they are golden.
  7. Keep the pancakes warm while you cook the rest, then serve with the suggested ingredients.
