Croque maman is the perfect breakfast for mum on mother's day

Ingredients :
  • 4 slices of white bread
  • Soft butter for spreading
  • Dijon mustard
  • 100g Gruyère cheese, finely grated
  • 2 slice of ham
  • 2 tomato, sliced thinly
  • Olive oil
  • 2 egg
  • 4-6 mushrooms
  • Black pepper
Preparation :
  1. Butter both sides of the bread slices and spread one piece with some Dijon mustard. Scatter with half of the cheese.
  2. Lay the ham and sliced tomato on top, and then scatter over the remaining cheese.
  3. Add a twist of black pepper, top with the remaining bread and press down firmly.
  4. Heat a good drizzle of olive oil in a frying pan over a medium heat.
  5. Place the sandwich in the pan. Leave for 1 to 2 minutes until the base is golden and the cheese is starting to melt.
  6. Turn over and cook for a further minute, or until golden. While the croque maman is cooking, heat another frying pan with a drizzle of olive oil.
  7. Fry the mushrooms and also the egg. Remove the croque maman from the pan
  8. Slice it in half and place the fried egg on top and the mushrooms on the side.
  9. Serve immediately.
