Roasted Quail

Ingredients :
4 Quail, cut in half
Roasted Quail3 sp sesame oil
2 sp cooking oil
3 clove garlic, smashed
4 stalk green onion, chopper
1/2 stalk lemongrass, chopped
1 tsp chili powder
1 sp cod liver sauce
1 tsp sugar
1/2 tsp salt

Preparation :
  • Roasted QuailHeat the cooking oil, add garlic and saute it until yellow and smell good.
  • Add the green onion and lemongrass, mix it , saute it until faded, lift it up, then add chili powder, cod liver sauce, sugar and salt, mix it, allow it until cold.
  • Smear each quail with seasonings above homogenously, allow it for at least 2 hours in refrigerator, then stick it into skewer.
  • Roast it on fire or in oven (1800C) until cooked while turn it back and forth and spread it with sesame oil, lift it.
  • Usually roasted quail served together with salt, pepper, and lime.

Chicken Caramel ala Vietnam

Chicken Caramel ala VietnamIngredients :
900 g chicken fillet, cut dice
2 sp vegetable oil

Ingredients for merge (merge seasoning) :
1 tsp sugar
2 sp fish sauce
2 sp shallots, sliced
2 sp garlic, slices
1 tsp black pepper
1 green chili
40 g ginger, cut into small piece and squeeze it

Chicken Caramel ala VietnamCaramel sauce :
200 g sugar palm
4 tsp fish sauce
750 ml chicken broth
1 red chili, cut in two pieces
1 tsp lime squeeze
1 cinnamon (5 cm) (as you like)
1 tsp black pepper (as you like)

Topping :
2.5 cm ginger, cut it thin
2 sheets spring onion
5 sheets coriander leave

Preparation :
Mix chicken fillet with the merge seasonings for one hour.
  • Make sauce : cook sugar until become caramel and the color turns out become dark brown. Add fish sauce, chicken broth, red chili and lime squeeze. Add ginger, cinnamon, and black pepper.
  • In other wok, saute the merged chicken until the sugar turns out become brown. Pour the caramel sauce to the chicken and cook it until cooked. Raise it.
  • Decorate your dish with sliced ginger, spring onion, and coriander leaf.
  • Serve it with warm rice.

  • Saute the crushed spices, galangale, lemongrass, salam leaf, lime leaf, red chili until smell good.
  • Add candlenut and young papaya, cook it.
  • Add coconut milk and egg, then mix it, cook until cooked.

Sumbat Sauted Squid

Ingredients :

Sumbat Sauted SquidSaute Squid :
12 squids, remove the head, clean it
25 g soun (white noodle), boil it until soft, leak through it
8 hioko mushroom, boil it until soft, leak though it
1 sp field mushroom, boil it until soft, leak though it
150 g chicken/pork meat, chopped soft
4 sp juicy tuber/water chesnut, chopped
1 clove garlic, crushed
1/2 clove onion, chopped
1/2 tsp black pepper
1/2 tsp white sugar
1 sp fish soy
1 egg, stir it

Nuoc nam cham :
2 clove garlic, chopped
2 red chili, chopped
3 sp fish soy
2 sp lime squash
1 tsp vinegar
1 tsp white sugar
75 cc boiled water

Preparation :
  • Saute : squid, soun, hioko mushroom, field mushroom until soft.
  • Add chicken/pork meat, water chesnut, garlic, onion, black pepper, white sugar, fish soy, and egg. Mix until homogenous , then dough into 12 pieces.
  • Take one squid, then put one part of the dough into the squid cavity, pin the tip, then do the same thing to the remain squid and dough.
  • Steam the squid for 15 minutes, raise and cool it. Then fry the squid in a hot cooking oil until cooked, raise it.
  • Nuoc nam cham: mix all the ingredients until homogenous.
  • Serve the squid with nuoc nam cham.

Rica-rica Squid (Cumi Rica-rica)

Rica-rica SquidIngredients :
400 g squid (without the head), slice it into ring form 2 cm
5 sheet lime leaf
3/4 tsp salt
10 red chili
1 tsp sugar
100 ml water
4 sp cooking oil for saute

Spices (Pound coarse) :
8 onion
2 clove garlic
6 red chili
1/2 tomato

Preparation :
  • Saute the spice until smell good and dry.
  • Add sugar and stir it until becoming caramel.
  • Add lime lead, squid, salt and red chili. Mix all the ingredients until the squid cooked and stiff.
  • Add water, then cook until dry.

Fry/Roasted Soy Fish (Ikan Bakar Kecap)

Fry/Roasted Soy FishIngredients :
1 dorang/pomfrest or trevally fish, add lime squash and salt, allow it for a while
Fish2 clove garlic
1 candlenut
1 onion
1 lemongrass, chopped
3 sheet lime leaf, crushed
4 sp sweet soy sauce
1 tsp chili crushed

Preparation :
  • Fry fish half cooked.
  • Crush onion, candlenut, and onion, then saute it, add lemongrass, lime leaf, chili crushed, mix homogenous. Add sweet soy sauce, then mix it until it become a caramel.
  • Fry/Roasted Soy FishSpread and oily on the fish with soy sauce.
  • Fry /roast the fish until dry, while spread the fish with the soy spice.
  • Add red pepper and tomato to the remain soy sauce for spiced spice.
  • Serve it with hot/warm rice and lalapan (dish of raw vegetables and a spicy sauce).

Chicken Shrimp Meatballs

Ingredients :

Chicken Shrimp MeatballsThe Meatballs :
500 g hacked chicken meat
250 g hacked peeled shrimp
150 g carrot, small dice cut
50 g crushed fried onion,
1 stalk onion leaf, chopped
Black pepper
Salt
1 egg, stir it
50 g cornmeal flour

Chicken Shrimp MeatballsThe Meatballs Gravy :
1500 ml chicken broth
1 stalk lemongrass
Pepper
Salt
Caisim (mustard green)

The Topping :
Celery, crushed
Fried onion

Preparation :
  1. Mix all together : chicken, shrimp, carrot, fried onion and onion leaf. Mix and knead until all mix well and homogenous. Add pepper and salt as you like, add egg, mix and add cornmeal flour.
  2. Boil the chicken broth and put in lemon grass. Take a handful of meat dough with left hand, knead and pull it out agree with your desire through the hole between thumb and index finger.
  3. Take it with spoon and then put the meat ball into the broth. Do the same thing until all the dough finished. Wait until the meatballs float, it means the meatballs is done. Raise it and leak through it.
  4. Make the remain broth become gravy. Taste it first, then you can add pepper and salt as you like, and add mustard green.
  5. Serve the meatballs with broth, celery, fried onion, sweet soybean sauce, chili sauce and vinegar.

Ayam Pesak (Pesak Chicken)

Ayam PesakIngredients :
1 chicken, cut in half
1 1/2 Liter of water
2 clove garlic
3 cm ginger
1/4 tsp pepper powder
2 sp fish sauce
1 tsp salt
50 cc chicken broth

Ayam PesakChicken gravy :
750 cc chicken broth
100 gram gourd, cut it square
1 stalk onion leave
1/4 tsp pepper powder
1/2 tsp salt

Spicy Ginger :
5 red chili, boil it
10 rawit chili, boil it
1 clove garlic
1 cm ginger
1/2 tsp salt
1 tsp vinegar

Preparation to make the pesak chicken
  • Boil water, put into it the chicken, and boil it for 15 minutes, after 15 minutes, raise it and drain it.
  • Use the chicken broth to make hainan rice and chicken gravy.
  • Smash down the garlic and ginger, fry it until smell good, then put into it the boiled water, mix it homogenously.
  • Add pepper powder, fish sauce, and salt, mix well.
  • Add chicken broth, mix it and cook it, after that raise it, drain it and cut it into 6 pieces.
Preparation to make chicken broth
  • Boil the chicken broth, then put into it the gourd, raise it immediately after boiled.
  • Put into it the onion leave, pepper powder, and salt, mix homogenously.
Preparation to make Spicy ginger
  • Smash down garlic and ginger, then fry it until smell good, raise it.
  • Smash the red chili and rawit chili, add the garlic, ginger, salt and vinegar, mix it homogenously.
  • Serve it with the Hainan Rice.

Tahu Gimbal (Gimbal Soybean Curd)

Tahu GimbalIngredients :

5 square white tofu
5 piece red chili
2 clove garlic
4 sp fried peanut
1 tsp vinegar
1 sp shrimp petis (condiment of the fermented shrimp)
2 stalk celery leaf, chopped
1 sp fried onion
3 sp sweet soybean sauce
Gimbal Shrimp at sufficiently
200 g cabbage, shopped

Seasoning For the Gimbal shrimp :

200 g Peeled shrimp
4 sp wheat flour
1 egg
1 tsp coriander
Tahu Gimbal2 clove garlic
1/2 tsp salt
1/2 tsp pepper powder
2 sp thick coconut milk
1 tsp leek, chopped
Cooking oil at sufficiently

Preparation :
  1. Crush red chili, onion and fried peanut. Add shrimp petis, vinegar, and soybean sauce.
  2. Add little bit of water, and mix it until homogenous. Allow it for a while.
  3. Fried the tofu until cooked, lift it up.
The making of gimbal udang (shrimp gimbal) :
  1. Crush all the seasonings, mix it with wheat flour and egg homogenously.
  2. Add coconut oil and water at sufficiently until become a thick dough.
  3. Mix the dough with seasonings, leek, and shrimp, mix it homogenously.
  4. Fried oil, then fry the dough spoon by spoon until brown. Lift it up and rain it.
  5. Cut the tofu when it still hot, serve it on the plate.
  6. Add gimbal udang and cabbage, then pour the flavor/seasoning, fried onion and celery.

Pindang Milkfish

Ingredients :
500 gr Milkfish
1 tsp tamarind
1 sp salt
cooking oil
250 ml coconut oil
3 clove onion, chopped
2 clove garlic, chopped
3 red chili, aslant chopped
1/2 sheet turmeric leaf
2 stick lemongrass
2 sp salt
15 sheet mangkokan leaf, chopped
2 tamarind kandis

Seasoning Crushed :
3 clove onion
1 clove garlic
5 red chili
2 cm ginger
2 cm galangale
1 cm turmeric

Preparation :
  1. Wash the fish, throw the fish gills and the scales, wash it cleanly, chopped, bedraggling it with salt and tamarind.
  2. Heat the cooking oil, put into it the milkfish, then fry until dry and cooked, lift it up and drain it.
  3. Fry the onion, garlic, red chili, and crushed seasoning until smell good.
  4. Put into it turmeric leaf, lemongrass, salt and coconut milk, cook until the coconut oil comes out.
  5. Put into it the milk fish, mangkokan leaf, and kandis tamarind, cook it using small fire until the seasoning absorb.

Kalasan Fried Dried Chicken (Ayam Goreng Kalasan Keringan)

Ingredients :
1 tail chicken, 500 gram, devise in 2 parts
2 sheets salam leaf
1 lemongrass
1 sp Munjung sago flour
1/2 tsp Baking powder
1/2 sp salt
500 ml water
400 ml cooking oil

Seasoning :
7 clove onion
7 clove candlenut
3 cm turmeric
1 sp coriander

Preparation :
  1. Mix all ingredients and seasonings then cook it until the water only left about 200 ml with small fire (don’t forget to close your cooking pan)
  2. Lift the chicken and allow it until cold, then boiled the broth until boiled
  3. Add the sago flour which has been dissolve with 3 sp of water, mix it until coagulate
  4. Lift it up and let it cold
  5. Add baking powder, mix homogenously
  6. Fry the chicken with cooking oil until brown then lift it up
  7. Fry the coagulated broth until dry then lift it, put it on the fried chicken
  8. Ready to serve

Recently, there are many people entrust their stomach business to a menu call instant noodle. Every shopping, most women put instant noodle in their requirement list, school children in board always keep noodle instant in their cabinet to prevent starving in the night, and hikers always bring noodle instant in their travel bag.

The main raw material of noodle instant is made from wheat flour and also use cooked oil, salt, polyphosphate sodium (emulsifier, stabilizer and thickening agent), sodium carbonate and potassium carbonate (both of them is acidity adjustment), tartrazine (yellow coloring agent).

Sometimes polyphosphate sodium mixed with guar gum. Other ingredients such as caramel, vegetable protein hydrocylate, ribotide, iron and maleat acid. And what is more, there are also food additives, which are chemical ingredients added into the manufacturing to make the noodle have certain properties.

The noodle spice for example, salt, sugar, red chili, onion, garlic, tomato sauce, soy bean sauce, Monosodium Glutamate (MSG) and luscious seasoning (chicken flavor, shrimp flavor, beef flavor). The stirofoam for noodle pack has been also presumed to be the root cause of cancer.

We are all know avocado, fruit that has soft green flesh with yummy taste... hmmmm. Yes, this fruit is suitable for all menu for daily healthy food. Not only for juice, ice cream, mixed ice, pudding but also for salad. Eat directly is great too.

Though the peel not pretty as apple or pear and the prize is cheap, but avocado had many benefits. It can reduce the risk to get stroke and hearth attack, because avocado is the only fruit which rich in fat, in fact the amount of fat is twice more than durian.

Ingredients :

500 g fresh shrimp, peel the cutan and head
Lime filtrate
3 sp tomato sausage
25 ml water
Basil leaf at sufficiently
4 clove onion, crush it
3 clove garlic, crush it
5 red chili, crush it
3 pecan, crush it
1/4 tsp pepper powder
1/4 tsp turmeric
1 cm ginger, strike it
1 tsp salt
1 tsp brown sugar

Preparation :
  1. immerge shrimp in lime filtrate for 15 minutes, then drain it
  2. Fry onion, garlic, red chili, pecan, and ginger until smell good
  3. Put into it shrimp, add pepper, salt, brown sugar, turmeric powder, tomato sausage and basil leaf. Allow it for a while
  4. Stick the shrimp on the skewer and bedraggled it with the spices
  5. Place it in the oven until the shrimp change become reddish-brown
  6. Lift it up and serve it fresh from the oven

Sate Padang

Ingredients :
300 gr beef meat, boiled, dice cut
3 stalk lemongrass
1 sheet turmeric leaf, cut into 3 pieces
4 sheet of lime leaf
75 g rice powder, dissolve in few water
½ tsp starch, dissolve it in few water
500 ml air

Seasonings :
10 clove onions
6 clove garlic
6 piece red pepper (lombok besar)
2 piece chili (cabai rawit)
1 sp coriander powder
1 tsp caraway seed powder
5 cm turmeric
4 cm ginger
2 cm galangale
salt sufficiently
pepper powder sufficiently

Preparation :
  1. Boil water, put the meet into it
  2. Put the seasonings, turmeric leaf, lemongrass and lime leaf
  3. Cook until the seasonings mix homogenously and all the ingredients cooked
  4. Lift the meet, drain it
  5. Stick each skewer with 5 piece of meet and then roast it for a while on ember
  6. Cook the earlier beef broth then add into it dissolved rice powder and maize powder.
  7. Lift it up and serve. it with fried onion

Milk Keep You Away From Intestinal Cancer

Drink lots of milk, because it’s healthy and able to reduce the risk for you to get intestinal cancer, said Dr Eunyoung Cho. His analysis explain 10 studies showed that 16 once milk can reduce threat of intestinal cancer until 12%.

Researchers from `Brigham and Women's Hospital` found that 16 once milk a day will reduce the risk of cancer until 12%. That number was analysis of 10 previous studies consist of 500,000 people who 5,000 among them had positive indication of intestinal cancer. Dr Eunyong Cho’s research issued on The Journal of the National Cancer Institute.

Intestinal cancer is the third biggest cause of death around the world. Previous study using animal as trial showed that calcium content in milk can protect that animal from cancer attack. Study on human also showed the same thing, consume calcium is very good to reduce cancer risk.

Each 1,000 mg increment a day or more will able to reduce 15% risk for women to get cancer and 10% for man. But, Dr Cho doesn’t found risk alleviation to get cancer by consume cheese and yoghurt which actually both of them were product that made from milk. While other study gave information that other products made from milk can increase the risk to get other cancer such as breast cancer and prostate cancer. Dr Richard Sullivan from Cancer Research England receive Dr Cho’s study as something new and interesting. Though Dr Sullivan said that the best way to reduce cancer risk is by eating balance diet between fruits, vegetables, to reduce fat accumulation.

Ingredients :
500 gram beef tail, cut it small pieces and boiled in 1 liter water
100 gram red bean, boiled
3 clove onion
1 pieces Bombay onion, square chopped
2 shred ginger
2 pieces carrots
2 stalk onion leaf, chopped
2 stalk celery, chopped
2 pieces clove
Salt and pepper sufficiently
½ tsp nutmeg powder
6 pieces beef sausage, cut it into 2 cm
50 gram pea

Preparation :
  1. Saute onion, Bombay onion and ginger until smell good
  2. Put it into the tail beef broth
  3. Add water until 2 liter of broth
  4. Add carrot, onion leaf, celery, tomato, clove, salt, pepper and nutmeg powder
  5. After the carrot half cooked, put into it the red bean and sausage rebus.
  6. Before cooked, add pea
  7. Allow it for a while, then soup is ready to serve

Bone Soup

Ingredients :
500g beef bone for soup, cook in boiled water until soft, add salt sufficiently, and then add water until become 1000ml broth
150g potato, cut in dice
150g carrot, shred
1 piece tomato, cut into 8-10 pieces
2 blade onion leaf, shred 3cm
3 tsp shredded celery
2 tsp margarine to sauteing

Seasonings :
5 clove garlic, chopped
2 clove onion, chopped
2 parts of ginger, striked
½ tsp pepper powder
¼ tsp nutmeg powder
salt sufficiently

Flavoring :
sweet soy sauce vinegar at sufficiently

Preparation :
  1. Saute onion and garlic until smells good, put it into the broth.
  2. Put into the broth potato, carrot and ginger, add pepper, nutmeg powder and salt at sufficiently.
  3. Cook until the potato and carrot soft enough.
