2 Tbs. vegetable oil
1 cup mushrooms, sliced
1 cup red bell pepper, sliced
1 lb. ricotta cheese
9 ounces frozen spinach, drained
4 eggs

  • Preheat oven to 350°F.
  • Heat oil in a heavy nonstick skillet over medium-high heat.
  • Sauté mushrooms and peppers 5-7 minutes, or until softened. Cool.
  • Blend all ingredients together and season with salt and pepper to taste.
  • Pour into a buttered 13x9 inch pan. Bake 40 minutes.
  • This recipe serves 4 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 4 only.
